Ingredients for the Chana Dal Laddu Recipe:

  • Chane ki dal-500 gm
  • Grated jaggery- 500 gm
  • Almond-25 gm
  • Cashewnut-25 gm
  • Clarified butter-300 gm
  • Turmeric powder-1-1/2 tsp
  • Cardamom powder-1 tsp
  • Charoli-25 gm
  • Milk-500 ml
  • Roasted ajwain powder-1 tsp

Method for this yummy sweet Recipe:

  • Firstly, soak chane ki dal in water overnight.
  • Further, grind chane ki dal in mixer.
  • Heat a pan, add 1 tbsp clarified butter, roast almond and cashewnuts.
  • Heat a vessel, add grated jaggery, add half cup water and dilute.
  • Now, heat a pan, add 3 tbsp clarified butter, add grinded chane ki dal and roast for 10 minutes on low flame.
  • Heat a big vessel, add 100 gm clarified butter, add roasted chane ki dal, add 500 ml milk, make flame high after adding milk, and then make it low, add turmeric milk, mix well, add roasted almonds, add roasted cashewnuts, add roasted ajwain powder, add cardamom powder, add diluted jaggery, totally we roasted 20 minutes on low flame.
  • Take a cup, add little milk, add 1-1/2 tsp turmeric powder.
  • Heat a pan, add 1 tbsp clarified butter, add chane ki dal mixture and roast for 10 minutes on low flame. Make round laddoos and roll over charoli.
  • Chane ki dal ke laddoo is ready.

Ingredients for Bharwa Shimla Mirch Recipe:

  • Oil-2 tbsp
  • Chopped Onions-2 big
  • Chopped tomatoes-2 big
  • Red chilli powder-1 tbsp
  • Coriander powder-1 tsp
  • Mutton keema-250 gm
  • Salt as per taste
  • Turmeric powder-1/4 tsp
  • Garam masala powder-1/2 tsp
  • Chopped coriender leaves-little
  • Capsicum-500 gm

Method for Stuffed Capsicum with Minced Meat Recipe:

  • Heat a pan, add 2 tbsp oil, add chopped onions, add chopped tomatoes, add red chilli powder, add coriander powder, add keema, add salt, add turmeric powder, add garam masala powder, add chopped coriender leaves,
  • Cook for 5 min on full flame to dry water add 250 ml water, mix and close the lid and cook for 5 min on full flame to avoid burning and mix stir and ready.
  • Take capsicum and make pockets, add keema masala.
  • Heat a pan, add 1 tbsp oil, full flame add filled capsicum, close the lid and cook for 2-3 min medium flame and again 2-3 min cooked
  • Heat a pan, add 2 tbsp oil, add chopped onions, add chopped tomatoes, add red chilli powder, add coriender powder, add keema, add salt, add turmeric powder, add garam masala powder, add chopped coriender leaves, cook for 5 min on full flame to dry water add 250 ml water, mix and close the lid and cook for 5 min on full flame to avoid burning and mix stir and ready.
  • Take capsicum and make pockets, add keema masala.
  • Heat a pan, add 1 tbsp oil, full flame add filled capsicum, close the lid and cook for 2-3 min medium flame and again 2-3 min cooked.

Ingredients for the Anda Palak Egg Recipe:

  • Spinach (Palak)-2 bunch
  • Eggs-8
  • Poppy seeds-2 tbsp
  • Onions-2 big
  • Tomatoes-2 big
  • Green chillies-80 gm
  • Turmeric powder-1/2 tsp
  • Garam masala powder-1/2 tsp
  • Black pepper powder-1/2 tsp
  • Coriander powder-1 tbsp
  • Ginger paste-1/2 tsp
  • Garlic paste-1/2 tsp

Method for the Egg Spinach Gravy Recipe:

  • Firstly, wash and clean palak thoroughly and then Clean eggs.
  • For Green Masala, Add green chillies to the mixer jar, add dhaniya powder, add ginger garlic paste and grind.
  • Heat a pan and add 3 tablespoon oil, finely chopped onions, finely chopped tomatoes, green masala, poppy seeds, finely chopped spinach and cook for 10 minutes on medium flame
  • Add salt, turmeric powder, garam masala, black pepper powder, add 1 glass water, close the lid and cook for 10 minutes on medium flame and bring to boil
  • Break eggs and add, now make flame high for 2 minutes and then medium the flame and cook for 5 minutes, add boiled eggs and cook for 1 minute, close the lid and cook for 2 minutes on medium flame, loosen the eggs with the help of spoon, add salt.
  • Egg palak is ready.

Banana Natural Ice Cream

Ingredients for the Ice Cream mixture:

  • Banana-7
  • Full cream milk-1 liter
  • Cashewnuts-25 gm
  • Almonds-25 gm
  • Cardamom powder-1 tsp
  • Condensed milk- 200 ml

Method for Banana Ice Cream:

  • Firstly, wash and Peel the bananas, store in container for refrigeration for 4 hours.
  • Heat milk, bring to boil and collect the milk cream.
  • Add bananas to mixer jar and Grind.
  • Add milk cream and condensed milk, cooked milk, cardamom powder, grinded banana to the mixer jar and then grind it.
  • Now add chopped cashewnuts and almonds and mix well and pour this mixture into ice cream container and garnish with chopped cashewnuts and almonds over top, and place this container in fridge for refrigeration for 24 hours.
  • Finally, our Banana Ice Cream is ready.

Ingredients for Egg Dosa Batter and Mixture:

  • Dosa Rice-400 gm
  • Urad Dal-150 gm
  • Methi- 1-1/2 tablespoon
  • Cooked Rice-1 cup
  • Grated coconut-1/2 big
  • Chopped Coriander-little
  • Finely chopped green chillies- 8-10
  • Eggs-3
  • Finely chopped onions-2 big
  • Salt-as per taste
  • Turmeric powder-1 spoon
  • Ajwain powder-1 teaspoon

Method for Egg Masala Mix Dosa:

  • Dosa rice, urad dal, and methi should be soaked in water for 6 to 8 hours. egg masala mix dosa
  • After soaking, grind it with lukewarm water and keep overnight with lid closed at warm place.Next day morning, open and stir by adding 1 tablespoon salt. Add turmeric powder and stir well. Our dosa batter is ready.
  • Preparation for egg mix, add grated coconut in a bowl, add finely chopped onions, add chopped green chillies, add chopped coriander, add salt, add ajwain powder, add beaten eggs and mix well. Add this mixture to the batter and mix well.
  • Heat a pan, apply oil, make the flame high, spread dosa mix batter and close the lid and cook for 1 minute. After 1 minute, turn upside down and cook for 1/2 minute. Egg masala mix dosa is ready.

In this recipe, I will show you dried Bombil Fish Biryani which is tasty and a culinary delight, popularly known as Bombay Duck Fish, this fish is mostly eaten in its dried forms. Ingredients:

  • Dried Bombil Fish (Bombay Duck) 250 gm soaked in water for 10 min. Cleaned & Washed
  • Onion 250 gm
  • 500 gm Rice
  • Tomato 250 gm
  • Green masala ( 1 ginger piece + 1 garlic bulb + 8 Green Chilly + 1 coriander leaves bunch) grinded
  • Turmeric powder 1 spoon
  • Garam masala powder 1 spoon
  • Salt 1 tbsp
  • Oil 100 ml
  • Ghee 50 gm

Method:

  • Firstly, Heat a pan and add 4 tbsp oil
  • Add fish pieces
  • Now Add salt 1/2 spoon
  • Similarly, Add turmeric powder 1/2 spoon
  • Cook for 5 min with lid closed
  • Add 2 tablespoon green masala
  • Now Add garam masala 1 spoon
  • Cook stir for 2-3 min on medium flame with lid closed
  • Secondly, Heat a vessel and add the remaining 4 tbsp oil
  • Similarly, Heat a pan and add half chopped onion, fry until golden brown
  • Add onion to the vessel and fry untl golden brown
  • Now add half tomato in pan and cook until it dissolves
  • Add other half tomato in vessel and cook until it dissolves
  • Now, add dried fish in pan. mix and cook for 2-3 min om medium flame with lid closed
  • Add 1 and 1/2 Ltr water in vessel and Add salt
  • Now Add turmeric powder and Add green masala
  • Allow it to boil
  • Now add rice and Allow it to Boil
  • When the water has dried
  • Add dried fish pieces
  • Now Add 2 tbsp ghee
  • Mix well
  • When the water has dried
  • Finally, Keep the Vessel on a Tawa and cook for 5 min on medium flame with lid closed
  • Hot and Delicious Bombay Duck Fish biryani is ready.
  • Serve Hot.
Malida Special Traditional Sweet recipe

Malida Recipe Konkan Special Breakfast Sweet

Malida is traditional konkan recipe made as a breakfast/Snack or sometime on special occasions. It has many versions and some view it as a comfort food when they use leftover chapati’s to make this recipe. In this recipe we will make it using rice flour in an authentic way as it is usually made. You can also make the Malida recipe using wheat flour and I will show it in the forthcoming blog posts.

The most important ingredient in a Malida recipe is Coconut and as coconuts are found in abundant in konkan region, this special dish is a local delicacy. Try the Mangalore famous Banana Buns recipe or Soft Idli Recipe made without Baking Soda. I will show you 2 methods to prepare Malida/Maleeda, one using the Steam cooker and another through regular vessel.

Ingredients:

  • Jaggery 250 gm
  • Rice flour 250 gm
  • Coconut 1 large grated or powder
  • Water 1 cup
  • Raisins 50 gm
  • Salt 1 spoon
  • Cardamom powder 1 spoon
  • Fennel seeds powder 1 spoon

Method:

  • Firstly, Add rice flour in a bowl
  • Now Add salt in water and dissolve it
  • Secondly, Sprinkle the salted water in the rice flour bowl and mash it continuously to mix it thoroughly.
  • Method 1: using steam cooker add water upto the specified limit and place the rice flour mixture in the cooker shelf’s and cook for 5 min on full flame while checking the water in the pan.
  • Method 2: Using a vessel, add 1 ltr water and rice flour mixture and cook for 5 min on full flame
  • Cook the rice flour until it forms balls when checked with fingers
  • Take off stove
  • In a bowl add the cooked rice flour
  • Similarly, in a bowl add grated coconut and grated jaggery and mix it well
  • Add the jaggery and coconut into the cooked rice flour bowl
  • Similarly, add raisins and Mix it thoroughly
  • Tasty Rice flour Malida is Ready.
  • Serve.

Idli Recipe without Soda & Chutney Recipe

Idli is a popular breakfast recipe in India often served with chutney and served across all the restaurant’s as a breakfast and sometimes as a snack. Today, we will prepare Idli recipe without using soda which is as tasty and yummy as the one served in hotel or restaurant’s. Also, we will prepare the lip smacking green chutney along with the Idli recipe.

To prepare Idli, rice is first soaked in water and then grinded to get the batter. Later we need to steam cook the batter in a vessel to make Idli’s. The chutney has coconut and green chillies along with other spices to get the perfect taste and goes well with the steaming hot Idli’s. This Idli recipe is prepared without using soda. Firstly, we will prepare the Idli’s as per the below method and then we will proceed with preparing the chutney.

Ingredients for Idli Batter:

  • Dosa Rice Rawa 500gm (Rice is washed and then drained for 30 min in a strainer and dried in open air and grinded a little for about 10 sec to obtain a thick powder)
  • Urad dal 100 gm soaked in water for 6-8 hrs
  • Cooked Rice 1 and 1/2 cup
  • Poha 1 cup soaked in water
  • Grated coconut 1

Method for Idli:

  • Firstly, In a mixer jar
  • Add grated coconut and cooked rice
  • Also add urad dal and poha
  • Add lukewarm water for fluffiness(No soda is used)
  • Secondly, Grind it to a very thin paste
  • Take the grinded paste in a vessel
  • Add rice rawa
  • Now Add lukewarm water
  • Mix it thorughly
  • Keep the vessel aside in a warm place for 10-12 hrs
  • Add 1 glass of water
  • Take out the idli vessel (washed and dried)
  • Apply oil to the idli vessel as shown
  • Heat the idli vessel
  • Add water as shown
  • Now Add idli batter into the idli vessel spots
  • When the water is boiling
  • Keep the idli plates in the vessel
  • Close lid and Cook for 12-15 min for full flame
  • Check for idli whether it is cooked
  • Switch off stove
  • Remove idli plates and allow it to cool for 5 min
  • Remove idli’s a shown
  • Soft and fluffy Idli’s are ready

Ingredients For Chutney:

  • Grated coconut 1
  • Dried mango 2-3 pieces or half lemon juice
  • Green chilly 7-8
  • Coriander leaves a few as shown
  • Ginger 1 piece
  • Garlic 3 cloves
  • Salt as per taste

Method for Chutney:

  • Heat a pan
  • Roast green chilly for 30 sec on medium flame
  • In a mixer jar
  • Add roasted green chilly, grated coconut, ginger & garlic, coriander leaves, salt.
  • Also Add dried mango pieces and water 1/2 cup
  • Grind it to a very thin paste
  • Now for Tadka do the following:
  • Heat a vessel and add 1 tbsp oil
  • Now add 1 tsp mustard seeds and a few curry leaves
  • Switch off stove
  • Add grinded chutney in the vessel
  • Mix it thoroughly
  • Tasty coconut chutney is ready.
  • Served Hot with Idli.

Chana Usali Nashta Recipe Breakfast

Chana or Chickpea is a pulse from a legume plant. Various cuisines have lots of dishes around chickpea. Similarly Indian cuisine offers main course as well as snacks and breakfast dishes made using chana as it is popular in India. In this recipe, we will prepare a breakfast dish using Chana or Chickpea called Usali or Usal, its a tangy and spicy Nashta recipe.

In this Nashta recipe, firstly, we pressure cook chana and later we cook it in spices like mustard, curry leaves to enhance the flavour along with other spices to make Chana Usali. Checkout my Tasty Banana Breakfast Recipe, you will love it.

Ingredients:

  • Onion 2 large chopped
  • Chickpea 1/4 kg Soaked in water for 8 hours
  • a piece of ginger
  • 1 lemon juice
  • Salt 1/2 tbsp
  • Coriander leaves a few
  • Green chilly 8
  • Curry Leaves a few
  • Water 1/4 ltr
  • Oil 4 tbsp
  • Mustard Seeds 1/4 tsp
  • Turmeric Powder a pinch

Method:

  • Firstly, Take the soaked chickpea and add to cooker vessel
  • Add salt and 1/4 ltr water cook until 6 whistles
  • If water still is not dried then you can dry it by cooking a little more with the lid open
  • Secondly, Heat a pan and add oil and add mustard seeds
  • Now add curry leaves
  • Add chopped green chilly and stir a little
  • Later add chopped onion
  • Roast it further until onion changes to golden brown on full flame
  • Add Turmeric powder, ginger paste and coriander leaves, add salt if required as per taste
  • Similarly, add chickpea to the pan on full flame and stir well for 1 min
  • Close the lid on medium flame allow it to cook for 5 min
  • Take off stove
  • Finally, Add 1 lemon juice to the pan and mix it well
  • Serve Hot. Tangy, Spicy flavorful healthy breakfast recipe is ready.

Surmai (Seer) Fish Biryani Seafood

Seer Fish also known as Surmai or King Fish is a popular fish which is used in many recipes across the word. Indian seafood recipes offer various dishes prepared using prawns, fishes and clams. In this Surmai or Seer Fish Biryani recipe, cooked fish is added to the rice and then cooked to get the tasty Fish Seafood delicacy.

Usuallly we prefer Surmai (Seer Fish) or Bangda (Mackerel) for Biryani among lots of other fishes.

Ingredients for Fish Fry:

  • Surmai fish (seer fish) 1/2 kg cleaned
  • Ginger 1 piece crushed
  • Red chilly powder 1 and 1/2 tbsp
  • Coriander powder 1/2 tbsp
  • Lemon juice 1/2
  • Garlic 2-3 cloves crushed
  • Salt as per taste
  • Turmeric powder 1/2 spoon
  • Sooji/Rawa as required

Method for Surmai Fish Fry:

  • Firstly, Mix all the ingredients and Make a fine paste
  • Secondly, Take Sooji/Rawa in a plate
  • Apply the mixture paste thoroughly to the fish
  • Apply Sooji to the Fish in a thin layer so that the masala does not come out and to add the crispness to fish fry
  • Further, Heat a pan
  • Add 2 tablespoon Oil
  • On full flame, Add the Fish in the Pan
  • Now Add 1 tbsp oil
  • Keep on full flame for 1 min and cook
  • Make the flame on medium
  • Close Lid and cook for 1 min
  • Similarly, Turn the fish and repeat
  • Add 1 tbsp oil
  • Keep on full flame for 1 min and cook
  • Make the flame on medium
  • Finally, Close Lid and cook for 1 min
  • Hot Tasty Surmai/Seer Fish Fry is Ready. Serve Hot

Now once the fish is fried, we will proceed to prepare the Biryani

Ingredients for Fish Biryani:

  • Coriander leaves a bunch
  • Tomato chopped 4 large
  • Onion 4 large
  • Biryani Rice 1/2 Kg
  • Ginger 1 big piece
  • Garlic 1 and 1/2 bulb
  • Green chilly 50 gm
  • Garam masala powder 1 tsp
  • Coriander powder 1 tbsp
  • Turmeric powder 1 tsp
  • Salt 1/2-3/4 tbsp

Method for Fish Biryani:

  • Firstly, On full flame add green chilly in a pan and roast it for 30 sec to 1 min
  • Add ginger, garlic, coriander leaves and green chilly in a mixer jar and make a fine paste
  • Secondly, Heat a vessel
  • Add 5-6 tbsp or 50 gm oil in pan and add chopped onions
  • Roast onions until golden brown and then add chopped tomatoes
  • Cook until tomato gets dissolved
  • Add water required as 1 ltr water for 1/2 kg rice and then Add garam masala powder, coriander powder, turmeric powder
  • Mix it well
  • Now add the grinded green masala and salt. Mix well
  • Further, Close the lid to boil it for 5 min
  • When it starts boiling
  • Add rice most importantly only after it starts boiling
  • Mix it well and Close lid
  • So the rice gets cooked and the water dries
  • Add fried fish when water dries and when only less water remains
  • Slowly Stir mix it to let the fish gets immerse in it
  • Close lid and cook until water dries for about 4-5 min
  • Heat a tawa for 2 min and on full flame Keep the Vessel on tawa
  • Finally, After 1 min make the flame on medium and cook for 5 min, do not open
  • Tasty Surmai Fish Biryani is ready. Fish pieces are intact and not broken as well as rice.
  • Serve Hot.
