Ingredients for Sev Puri Snack Recipe:

  • Kabuli chana-100 gm
  • Sev-100 gm
  • Finely chopped tomatoes-2 big
  • Finely chopped onions-2 big
  • Pomegranate (anar dana)-1 cup
  • Coriander leaves-little

Ingredients for green chutney:

  • Green chilli-1
  • Coriander leaves-little
  • Salt as per taste

Ingredients for red chutney:

  • Red chilli powder-1/2 tablespoon
  • Garlic paste-1 spoon
  • Ginger paste-1/2 teaspoon
  • Salt as per taste. Grind all the above ingredients separately.

Ingredients for Tamarind chutney :

  • Tamarind-25 gm
  • Soak tamarind in warm water for 20 minutes. It is better to extract tamarind pulp by pressing with hand and no need to grind. Add 4 tablespoon jaggery powder to tamarind extract, add little salt and mix well

Method for Sev Puri Snack Recipe:

  • All three chutneys are ready.
  • Cook Kabuli chana in the cooker with salt and turmeric powder and bring 6 to 8 whistles)
  • Make small hole to puri, add cooked kabuli chana, add all the three chutneys, add sev on top, add finely chopped tomatoes, add finely chopped onions, add pomegranate (anar dana), sprinkle little chopped coriender leaves.
  • Sev puri is ready.
Carrot Kheer

Gajar Kheer Carrot Sweet Dish

Gajar or Carrot is widely popular Vegetable/Fruit which is often eaten raw but also has many famous sweet dishes like Kheer, Halwa. Mix Vegetable biryani also has chopped Carrot pieces along with other veggies. Milk is a common ingredient in Sweets or Desserts but using dairy milk or Coconut milk further enhances the richness of the dish.

Today, we will prepare Gajar Kheer which is a sweet recipe and is a most favourite Carrot dish of many. There is like Rice or Wheat/Sooji in this recipe. It is just prepared in milk while adding dry fruits. This recipe is sugar free as it has Jaggery and we have used organic Jaggery powder but instead regular Jaggery can also be used. Ingredients for Gajar Kheer:

  • Carrot 500 gm Grinded
  • Clarified butter 2 tbsp
  • Almonds 25 gm Chopped
  • Corn flour 1 tbsp
  • Cashewnuts 25 gm Chopped
  • Jaggery powder 150 gm or 4-5 tbsp
  • Cardamom powder 1 spoon
  • Fennel seeds powder 1 spoon
  • Milk 500 ml

Method for Carrot Kheer:

  • Firstly, In a mixer jar, add carrot and grind it to a paste
  • Secondly, heat a pan and on full flame
  • Add 2 tbsp ghee
  • Add chopped cashewnuts and almonds
  • Later, Roast it for 15 sec while stirring it
  • Now add carrot paste
  • Cook further for 2 min while constant stirring on full flame
  • Later add milk and mix it well
  • Add Jaggery powder (Most importantly, Do not add regular jaggery while cooking. Add it only at the end after the vessel is off stove and cooled) and mix it well
  • Cook it for 2 min while constantly stirring
  • But after 1 min add fennel seeds and cardamom powder.
  • Mix it well
  • Similarly, Cook for another 1 min and take off stove
  • Tasty Carrot Kheer is ready. Serve Hot.

Upma or Uppittu is the spicy version of Sheera. Sheera is one such Indian recipe using Sooji/Rawa/Semolina as a Breakfast/Sweet/Snack. This recipe is unique as the food colour used in this recipe is extracted from a vegetable and is completely natural. Likewise, There are many recipes that need Rawa/Sooji as the main ingredient which can be a dessert like Sooji Ladoo or some indian breads like Chapati and roti use Sooji along with Wheat or Rice Flour.

Ingredients:

  • Semolina/Sooji/Rawa 300 gm
  • Cashewnut 25 gm
  • Peas/Matar 150 gm
  • Raisins/Kishmis 25 gm
  • Almonds/Badam 30 gm
  • Cardamom Powder/Elaichi Powder 1 spoon
  • Milk 300 ml
  • Sugar 200 gm
  • Salt 1/2 spoon
  • Ghee/Clarified Butter 100 gm or 100 ml Oil
  • Water 300 ml

Method:

  • Firstly, In a mixer jar
  • Add peas, 1/4 cup water and grind it to a fine paste
  • Further, Heat a tawa/pan
  • Add rawa and roast until 2-3 min on full flame with constant stirring and keep it aside
  • Similarly, Heat a pan and on full flame
  • Add ghee
  • Now add cashewnuts and raisins
  • Roast it for 1 min while stirring it constantly
  • Now add milk, water and mix it
  • Add cardamom powder.
  • Similarly, add peas paste and mix it well.
  • Cook it further until it boils
  • Later add Sooji/Rawa and most importantly stir mix it thoroughly to avoid forming lumps
  • Firstly, On low flame, close lid and cook for 2 min
  • Add the sugar powder and mix it thoroughly
  • Secondly, On medium flame, close lid and cook for 1 min.
  • Tasty Sooji/Rawa Sheera is Ready. Natural food colour is used in this recipe.era

I tried paneer very late and it was at a restaurant, later I began experimenting with this milk based product in many recipes. Paneer Fry is one such delicious vegetarian recipe prepared using tasty masala which is applied to paneer pieces and then shallow fried in oil. This is a veg starter recipe which can also be a tea-time snack or a side dish with dal chawal. Ingredients for Paneer Fry Tasty Masala:

  • Paneer 400 gm
  • Red Chilly Powder 1 tsp
  • Lemon juice of 1 lemon
  • Garam masala powder 1/2 spoon
  • Salt 1 spoon
  • Green masala 1 tbsp (poppy seeds, ginger, garlic and coriander leaves)
  • Coriander powder 1/2 tsp

Method:

  • Firstly, In a bowl
  • Add lemon juice
  • Further, add garam masala powder
  • Now add coriander powder
  • Mix it well
  • Later, Paneer is cut into pieces.
  • Apply the masala to the paneer pieces thoroughly
  • Keep it aside for 10 min
  • Secondly, Heat a pan and on full flame
  • Add 2 tablespoon oil
  • Place the paneer pieces in to the pan
  • Fry for 1 min on each side with lid close
  • Later, Turn the pieces on other side.
  • Cook for 1 min with lid closed and Take off pan
  • Tasty and crispy paneer fry is ready.
  • Serve Hot as a snack or side dish.

Kaddu Sabzi Vegetarian Recipe

Kaddu is one such vegetable which is popular for its sweets recipe as well as a veggie in lots of sabzi dishes around the world and is a vegetarian delight. In this recipe, I will show you a simple but very delicious Kaddu Sabzi Recipe made in spicy masala which further enhances the taste. Kaddu is also known by many names like Lauki, Dudhiya and Bhopla. In this sabzi recipe chopped kaddu pieces are cooked with grinded green masala which also has grated coconut to make it lip smacking vegetarian recipe. Tastes best with chapati, Roti or phulka.

Ingredients:

  • Bottle Gourd 500gm
  • Chana dal 2 tbsp
  • Coconut grated 1/2
  • Green chilly 50 gm
  • Ginger 50 gm
  • Garlic 4-5
  • Coriander leaves
  • Onion 250 gm
  • Tomato 2-3
  • Salt as per taste
  • Turmeric powder 1 spoon
  • Oil 2 tbsp

Method to prepare the Kaddu Sabzi:

  • Firstly, Roast green chilly for 30 sec
  • Secondly, In a mixer jar, add chilly, ginger, garlic and coconut along with little water and grind to a medium thick paste
  • Further, Heat a pan and on full flame
  • Add 2 tbsp oil
  • Now, add onion and roast until brown
  • Add tomato and stir cook until it softens to a paste
  • On medium flame add chana dal and mix it
  • Add the grinded green masala and stir cook for 30 sec
  • Add salt and turmeric powder
  • Mix it well
  • Most importantly, To avoid darkening of chopped Bottle Gourd pieces, keep them immersed in water.
  • Add chopped bottle gourd and mix it well while cooking on for 2-3 min on medium flame
  • Later, Close lid and cook further for 5 min on medium flame
  • Tasty bottle gourd sabzi is ready.
  • Serve hot with Chapati, Roti or Phulka.

Matar Pulao (Peas Pulao) Lunch/Dinner Recipes

Matar (Peas) Pulao

Matar or Peas is a popular ingredient used as a vegetable in lots of dishes and cuisines around the world. In India, green peas known as matar is used to make sabzi’s or pulao.

In this recipe, we will prepare Matar Pulao, it is a rice based dish cooked in Indian Masala and is a type of Biryani. Pulao is also known as Pilaf, Pilau and Pulav

Matar
Fresh Peas (Matar)

Ingredients:

  • Rice 750 gm
  • Fresh peas 750 gm
  • Mint leaves half bunch optional
  • Poppy seeds 50 gm
  • Coriander leaves half bunch
  • Salt 1 tablespoon
  • Green chillies 100 gm
  • Garam masala powder 1 spoon
  • Onion 2
  • Ginger 2-3 pieces
  • Garlic 1 bulb
  • Turmeric powder 1 tsp
  • Tomato 500 gms
  • Oil 100 gm

Method: (Firstly, We will prepare Matar Masala)

  • Heat a pan and on full flame
  • Roast poppy seeds on medium flame for about 10-15 seconds while stirring it.
  • Heat a pan and add 3 tbs oil
  • Add 1/4th green chillies and roast it for 30 sec while stirring constantly
  • Now add onions and roast until golden brown
  • Add tomato and cook until it dissolves
  • Now add 1/2 of both min leaves and coriander leaves and mix well
  • Further, we need to add a little ginger-garlic paste and stir
  • Now Add turmeric powder
  • Add salt and add garam masala powder
  • Mix it well
  • Add peas and stir mix for 30 sec on full flame
  • Close lid and cook for 2 min on medium flame (In between after 1 min stir the matar)
  • Take off stove and keep aside

For Pulao:

  • Heat a vessel, on full flame
  • Add oil
  • Now add 2-3 crushed cardamoms
  • Add 1 spoon Caraway Seeds
  • Now add 2-3 pieces cinnamon
  • Add 4-5 cloves
  • Now add green chillies cut from the end and cook in oil for 30 sec
  • Add remaining mint leaves and coriander leaves and mix well
  • Now add remaining onions and roast until golden brown
  • Add tomato and cook until it is dissolved
  • Add the remaining salt and turmeric powder
  • Mix it well

  • Add water (For 750 gm Rice, we need 1 and 3/4 ltr water)
  • Now add the remaining garam masala and mix it
  • Add poppy seeds paste
  • Cook and allow it to boil
  • When it is boiling add rice and mix thoroughly
  • Close lid and cook until water dries and little water remains on full flame
  • Add ghee 1 tbs and mix well
  • Now add matar masala and mix thoroughly
  • Heat a tawa.
  • Further, Place the vessel on tawa and cook on dum, initially cook for 1 min on full flame.
  • After that Cook for 5 min on medium flame.
  • Tasty Matar Pulao is ready.
  • Serve Hot
